Scientifically light bends at about 1 degree every 69 miles. You also have the firmament which allows light to reflect off it. You have light refraction and wave diffraction which bends light.
Modeling this on Flat Earth or the Globe is easy since the concept of perspective is agreed upon by both.
The reason for why this happens is heavily debated.
So if you look close up at the observers perspective in Iceland, you can see the apparent orbit the Sun will be taking and you can conclude from the photo alone that it will be visible for 24hrs. Running the model throughout the 24hr day cycle shows the Sun being in the observers perspective for the entire time.
